Zolota Forel restaurant, Korostiv

Korostiv, Lviv region, Ukraine

Zolota Forel (“Golden Trout”) is a restaurant and hotel complex in the village of Korostiv near Skole, right beside the Kyiv–Chop highway. Its heart is the family’s own trout farm on the Butyvlia mountain river: the fish are raised from the egg and then served in the restaurant that overlooks the ponds. The farm goes back to 1976; the current owners revived the ponds and the hatchery and turned them into a family-run place with a genuine farm-to-table concept. Many reviewers say their families have been coming here for more than ten years.

The setting is a Boyko village in a valley between forested slopes: wooden cottages, terraces above the water, log-built dining rooms, silence and the sound of the river. In summer the best seats are on the open terraces with views of the ponds and hills; in winter, in the warm timber-walled halls.

What to try

The main reason to come is fresh trout from the farm’s own ponds. It is served in several ways: grilled over charcoal, baked in homemade sour cream with herbs, with pine nuts, marinated in Carpathian herbs or hot-smoked. The farm is especially proud of its golden trout and sterlet, as well as the red trout caviar harvested twice a year. Guests recommend the rainbow-trout pâté with house-baked bread, the fish soup with croutons and salamur sauce, trout dumplings and potato pancakes with caviar.

Alongside the fish, the menu has Carpathian and Ukrainian classics: banosh, bograch, Ukrainian borshch with salo spread, creamy porcini soup, porcini in sour cream, homemade pickles and, for dessert, cherry strudel or cherry varenyky. The menu changes with the seasons and the local produce available. Sample prices from the menu – please check current prices at the restaurant: trout grilled or in sour cream about UAH 1,000 per kilogram of live weight, fish soup UAH 310, trout pâté UAH 330, banosh UAH 230, bograch UAH 360.
