ZRUB Ethno Restaurant, Iltsi

Iltsi, Ivano-Frankivsk region, Ukraine

ZRUB Ethno Restaurant is a new log-built home of Hutsul cooking in the village of Iltsi, on the edge of Verkhovyna, the town often called the Hutsul capital. The name says it all: «zrub» is the traditional log frame, and the house is built from massive timbers, with warm wood inside, heavy beams under the ceiling, wide tables and big windows looking onto green slopes. Upstairs there is a covered wooden veranda-gallery with a panorama of the mountains, a lovely spot for lunch in summer and autumn, when mist hangs over the Cheremosh valley.

The owners created ZRUB as a place for good company and for getting to know Hutsul culture at the table. Families, groups of friends and travellers touring the Verkhovyna area stop here for a proper meal after a hike to Synytsia or Pip Ivan Chornohirskyi, or after a walk around Iltsi. On Google Maps guests rate it 4.7 from more than 400 reviews, one of the best scores among the restaurants of the Verkhovyna area.

What to try

The menu is built on traditional Hutsul cooking made from local produce to old recipes. Don't miss:

  • banosh with brynza: cornmeal porridge cooked in cream and generously topped with sheep's cheese, crackling and sour cream;
  • kulesha, the firm cornmeal porridge that no Hutsul feast goes without;
  • knyshi, pastries filled with Hutsul brynza and herbs, baked until golden;
  • pot roast, Hutsul holubtsi (cabbage rolls) and Hutsul-style deruny (potato pancake with chicken, mushrooms and cheese);
  • soups: «Taste of the Carpathians» bograch, Ukrainian borscht with homemade salo, and mushroom soup made from dried porcini;
  • trout in sour cream sauce: tender Carpathian trout fillet baked with herbs;
  • homemade varenyky with potato and mushrooms, with curd cheese or with cherries.

For groups there are wooden boards: the ZRUB cheese board with nuts and honey, a «trophy» meat board, and the «Gazda's stock» board with three kinds of salo on rye bread. The signature grill dish is a big bone-in steak, the «ZRUB Tomahawk». To drink there is homemade uzvar (dried-fruit compote), kvass, Carpathian herbal tea, and homemade liqueurs and nastoyankas. The menu published on the verkhovyna.life portal does not show prices, so please check current prices on site; visitors estimate a meal at roughly UAH 200–400 per person.

Atmosphere and experience

ZRUB is all about the cosiness of a timber house and the view. You can sit in the warmly lit hall under the beams or take a table on the veranda and eat with the mountains in front of you. It works equally well for a quiet family lunch and for a get-together with friends after a hike: the hall is spacious, there are large tables for groups, grill dishes and sharing boards. Takeaway is available, and according to Google Maps there is also delivery; please confirm by phone.
