Mirella confectionery, Svaliava

Svaliava, Zakarpattia region, Ukraine

Mirella is a café-patisserie in Svaliava founded by pastry chef Myroslava Holonych. It bakes signature cakes and pastries, traditional Transcarpathian baking, crackers and biscuits, and its best-known creation is the Svaliava cake, the town’s edible symbol. In 2022 Mirella represented Zakarpattia’s food culture at the international Terra Madre fair in Turin, Italy, running kifli-baking masterclasses and preparing a traditional cornmeal bohach. The patisserie has also been nominated for the “Ark of Taste of Ukraine” atlas with its kerechun bread, hajosi with plum butter and crackling pogácsa, and it is listed among Zakarpattia’s craft producers on the region’s official tourism portal.

Why stop by

Mirella is a place to sit down: a small café with a dessert counter and a summer terrace where people have coffee and cake and buy sweets to take away. On Google Maps it has well over a hundred reviews with a high rating. For travellers it is a pleasant stop on the Kyiv–Chop highway — a break on the way to the mountains or the spa towns of the Svaliava area, and a chance to take home a cake you will not find anywhere else.

What to try

  • Svaliava cake — the classic version with blackberries, blueberries and a mushroom-and-beer ganache, the summer one with mushroom mousse on cream and milk chocolate. Forest berries, mushrooms and beer are exactly what the Svaliava area is famous for.
  • Kifli crescents, hajosi with plum butter, crackling pogácsa and the ritual kerechun bread — classic Transcarpathian baking.
  • Cakes and pastries from the counter, crackers, biscuits and long-life cakes that travel well.

Transcarpathian baking grew up where Ukrainian, Hungarian and Slovak tastes meet — hence lekvar plum butter in pastries, kifli and pogácsa. Kerechun is the Christmas Eve bread, and “town cakes” such as the Svaliava are a modern continuation of that story. Uzhhorod, Khust and Irshava already have their own signature cakes, each combining local produce with the town’s history — a tasty way to get to know the region and a good gift for those waiting at home.
