Baczewski Restaurant, Lviv

Baczewski Restaurant is one of Lviv’s best-known places for Galician cuisine, on Shevska Street 8, a few steps from Rynok Square. It is dedicated to the Baczewski family — Lviv entrepreneurs and patrons who in 1782 founded one of the world’s first vodka factories and made the city famous for their liqueurs far beyond Galicia. The restaurant recreates the spirit of interwar “Merry Lviv” — a city of cabarets, theatres and long evenings, where refinement met a touch of mischief.

Today’s restaurant is not a museum, but it honours that history: old photographs, labels and liqueur recipes are part of both the décor and the menu.

Atmosphere

The restaurant spreads over several floors of an old townhouse. Its heart is the orangery, wrapped in greenery, with a grand piano and cages of singing canaries — time seems to slow down here. Other rooms are styled after old Lviv, with velvet curtains, a wooden staircase, bookshelves and china-filled dressers. In summer there is a terrace on the cobbles of Shevska Street.

What to try

The kitchen is a modern reading of Galicia’s culinary heritage, where Ukrainian, Polish, Jewish, Armenian and Austrian traditions met over centuries. Chef Yurii Zhelisko works with old recipes and local produce. Worth ordering:

• Lviv-style żurek to Lady Stefa’s recipe — also served in a bread bowl;
• tertiukhy — Galician grated-potato pancakes with porcini or cured duck;
• banosh with mushrooms, cracklings and bryndza — a Carpathian classic;
• borscht on smoked ribs with smoked pear, and Lviv-style green sorrel borscht;
• Galician herring, “Not-a-forshmak”, salo and varenyky with potato and cracklings;
• mountain roe-deer goulash, game varenyky and rabbit patties with banosh;
• burrata made from Carpathian buffalo milk;
• for dessert — Lviv cheesecake, poppy-seed syrnyky and strudel.

Experiences

The most popular experience is the Galician-style breakfast: a generous buffet of pastries, starters and hot dishes, a glass of sparkling wine and live music in the orangery. Because of these breakfasts a queue often forms at the door in the morning, so come at opening time or book a table. The restaurant also has a shop selling liqueurs, infusions, farm products and souvenirs — a fine edible gift from Lviv.
