Babyn Bograch Tavern, Polianytsia (Bukovel)

Babyn Bograch tavern ("Grandma's Bograch") is located inside the Hutsul Land ethno park in Polianytsia, at the Bukovel resort, behind the Lake of Youth. It is a large log-built wooden tavern among spruce trees: inside you find timber walls, embroidered cushions and woollen lizhnyk blankets on the benches, tiles, bright folk ornaments and plenty of antique objects. The name and style are linked to a local legend: the young Emperor Franz Joseph, fleeing an angry landlord, is said to have hidden in a Kolomyia tavern called Babyn Bograch, and later stopped there every time he visited Galicia to enjoy his favourite Kaiserschmarrn. According to the owners, some of the objects on the walls come from that old tavern.

The idea of the tavern is to recreate old Carpathian recipes. On Google Maps it is rated 4.4 from more than 1,800 reviews.

What to try

The kitchen is open: the main dishes are cooked in a real wood-fired oven built with century-old techniques, and you can watch the process straight from the dining hall. The same oven bakes sourdough bread every day. The owners emphasise local produce: trout from the park's own Smerekove lake, mushrooms and berries from the surrounding forest, cheese from their own cows and goats. Worth ordering:

• Babyn bograch, cooked in a cauldron over a live fire, with a spicy dressing;
• oven-baked banosh under a bread lid with three traditional sauces;
• their own highland cheeses with pine-cone honey;
• trout baked in its own juices, plus trout pâté and fish soup made with trout from their own lake;
• Mangalica pork (the curly-haired pig breed), slow-cooked in the oven;
• paliushky dumplings with forest mushrooms and smoked duck, or Verkhovyna-style kishka sausage with stewed cabbage;
• for dessert, Kaiserschmarrn, "the emperor's favourite", with pickled plum (takes up to 40 minutes, serves two).

To drink there are home-made fruit liqueurs (including a tasting set "from Grandma"), uzvar dried-fruit compote, Carpathian herbal tea with honey and beer brewed in Bukovel. Sample prices from the menu below; please check current prices at the restaurant.

Experiences

A visit to the tavern combines well with a walk around the ethno park: Hutsul Land recreates the life of the Hutsuls, Boykos and Lemkos, with the houses of a potter, shepherd, weaver and molfar (folk healer), a hrazhda farmstead, workshops, suspension bridges and an animal area. You may hear live music by the tavern – the venue's own photos show a folk trio welcoming guests; ask on site about performance times. Next door, the "YO" fast-food stand serves dishes from the grill and open fire – ribs, shashlik, banosh, home-smoked trout and bograch in a bread bowl – for a quick bite during your walk.

• Address: Hutsul Land ethno park (behind the Lake of Youth), Bukovel resort, Polianytsia, Nadvirna district, Ivano-Frankivsk region.
• Entry: until 18:30 the tavern is reached through the ethno park, which charges admission (in 2026 adults UAH 450, reduced UAH 380, children under 6 and war veterans free). After 18:30 the park closes and the restaurant is accessible only with a table reservation.
• Opening hours: daily 10:00–22:30.
