Borovyk Mushroom Farm (Champiland), Boryslav

Boryslav, Lviv region, Ukraine

Borovyk is a family mushroom farm in Boryslav, a few kilometres from the spa towns of Truskavets and Skhidnytsia. It was founded in 2002 by brothers Myron and Mykhailo Turchyn, and over twenty-odd years the small business has grown into one of Ukraine's leading button-mushroom producers, harvesting around 120 tonnes every month. Borovyk was the first company in Ukraine to obtain the international GLOBALG.A.P. quality certificate and sells its mushrooms both in the Lviv region and abroad. Despite its size it is still a family affair, with several generations of the Turchyn family involved.

In autumn 2022 the farm opened a tasting room and a visitor attraction playfully named “Champiland”. Since then Borovyk has become one of the most unusual craft addresses in the Truskavets – Boryslav – Skhidnytsia resort triangle: here you can see how the mushrooms you buy in the supermarket are actually “born”.

Why go: the “Secrets of Champiland” gastro tour

Tours are run for groups and individual visitors by advance booking. The programme includes:

  • the story of the company and how a nutritious substrate for the mycelium is made from peat, straw and wheat;
  • a visit to the growing chambers, where mushrooms sprout on multi-tier shelves at every stage, from tiny “pins” to big caps;
  • an introduction to processing: drying and preserving;
  • a tasting of all Borovyk products and of mushroom dishes made from the farm's own champignons.

Visitors' reviews most often mention the incredible mushroom aroma in the chambers and the chance to buy fresh mushrooms straight from the grower at the end. For children the tour is a hands-on science lesson; for adults it is a fun food outing between spa treatments.

What to taste and buy

The farm sells fresh champignons (packed, loose and large ones for the grill), dried and ground mushrooms and a range of preserves: pickled mushrooms, home-style champignons, “Galician” stuffed mushrooms with brynza cheese and walnuts, and mushroom caviar. Dried porcini are sometimes available to order. A jar or two makes a tasty souvenir from the Carpathian foothills that travels well.

Mushroom growing is a young but noticeable part of the food map of a region best known for oil and mineral waters. For resort guests it is a rare chance to see modern farming from the inside and to learn that good mushrooms depend on strict technology, not chemicals.
