Snail Farm, Nyzhnie Selyshche

Nyzhnie Selyshche, Zakarpattia region, Ukraine

The snail farm in Nyzhnie Selyshche is one of the first snail farms in Ukraine and the first in Zakarpattia. It has been running since 2017 in a village near Khust that has long been known as a little food hub — the well-known Selyshche cheese dairy is here too. For travellers it is a chance to see how garden snails are raised and to taste a delicacy many Ukrainians still think of as French, prepared with local recipes.

What to expect

A visit has two parts. First comes a farm tour: the owners explain how the farm works, how the snails start out in a greenhouse and, in early summer, move to open pens with wooden shelters and a misting system, where they grow until autumn. You can look at the snails up close, find out what they eat, how long they take to mature and why clean water and good greens matter so much.

The second part is a snail tasting. Several versions are served: snails in a classic garlic-and-herb sauce and a "Transcarpathian" version with local brynza cheese and lekvar, a thick plum butter. A glass of Transcarpathian wine usually comes with the tasting. The farm's curiosity is snail caviar — tiny pearly eggs served on bread with butter and herbs, with a flavour often compared to forest herbs and mushrooms. Caviar and frozen snails are sold on site.

  • guided tour of the farm and the story of snail breeding;
  • tasting of snails in several sauces with Transcarpathian wine;
  • a taste of snail caviar;
  • snails and caviar to take home.

Food tourism, Transcarpathian style

Nyzhnie Selyshche shows how a small village can thrive on food tourism. The cheese dairy, the farm, guesthouses and routes around Khust form a small gastro cluster, and the snail farm is its most unusual stop. For families it doubles as a biology lesson: children love watching the snails, while adults compare the taste with what they tried abroad. If you are planning a food tour of Zakarpattia or wondering where to try snails in the Carpathians, put it on your list.
