Cheese dairies and mountain pastures of the Carpathians

Carpathian cheese is not a souvenir but part of mountain life. In summer shepherds drive their flocks up to the polonyna pastures, where budz, bryndza, vurda and Hutsul cheese are made daily in wooden huts. Down in the valleys, family dairies turn local milk into hard cheeses, camembert-style and goat cheeses.

Many farms let you watch the cheese being made, taste it fresh and buy some to take home. Some dairies run tours and tastings, and shepherds on the pastures are happy to talk about grazing and tradition if you come with respect for their work.

Tip: the pasture season runs roughly from late May to September, and the way to a shepherd hut is often a mountain trail or a dirt road. Bring cash, good shoes and a cool bag, and book dairy tastings by phone in advance.
