«To the Boykos for Cheese» Food Tour from Lviv, Borynia

Borynia, Lviv region, Ukraine

«To the Boykos for Cheese» is a one-day food tour from Lviv to the Upper Dniester Beskids run by the Lviv tour operator TOP-TOUR. The programme combines Boyko wooden architecture, the mountain scenery around Turka and, above all, a hands-on introduction to Boyko cheese: participants do not just taste it but make cheese over an open fire. The tour is designed mainly for school groups, but adult groups can book it too.

Itinerary

  • 8:00 — departure from Lviv. The road heads south-west towards Sambir and Turka, to the upper reaches of the Dniester.
  • Yasenytsia-Zamkova. A look at the three-tiered wooden belfry of St Michael's Church, built in 1730 — one of the finest examples of Boyko folk building. The 14-metre tower once had a chapel on the second tier and bells on the third.
  • Borynia. A photo stop with mountain panoramas, a cheese-making workshop over the fire, a tasting of ten local dishes and drinks and a concert of patriotic songs.
  • Around 21:00 — return to Lviv.

Borynia's cheese story

Borynia is one of the most rewarding Boyko villages for food lovers. From the late 18th century until 1940, German colonists lived in the upper part of the village, known as the Colony, and they made Borynia famous for cheeses said to have been enjoyed in Vienna, Prague and Paris. Today the cheese-making tradition is carried on by the local Komarnytskyi family, who make a hard «Boykivskyi» cheese and brynza and are reviving yeast-free bread from coarse flour. The Boyko table may include coarse-flour pies, huslianka (soured milk), oshchypky cheese and mountain herbal tea, with local musicians playing authentic songs and kolomyikas.

Why children love it

The cheese workshop is the school groups' favourite part: milk is warmed over the fire, starter is added and the curds are shaped by hand. Children see how a dish the Boykos have made for centuries is born from simple ingredients, and can take their own cheese home. Such trips complement history and local-studies lessons well, since in one day pupils meet Boyko architecture, everyday life and music.

Extended programme for adults

For adult groups the operator can add the Church of St Michael the Archangel in Uzhok (1745, a UNESCO World Heritage site), a soak in a hot tub at a local spa and a drive over the Uzhok Pass. However, the Uzhok Pass is in the border zone, so groups are not taken there under martial law — check this part separately.
