Salaš Beckov: 100% sheep’s cheese and bryndza dumplings

Beckov 600, 916 38 Beckov, Slovakia

A sheep salaš beside one of the Váh valley’s finest castles

Beckov is a village in the Váh valley between Nové Mesto nad Váhom and Trenčín, overlooked by the ruins of medieval Beckov Castle on a limestone crag. A little above the village, on the green slopes at the foot of the Považský Inovec hills, stands Salaš Beckov — a timber complex with a restaurant, a farm building where the milk is processed, and pastures all around. Aerial photos show the farmstead tucked among meadows and woodland.

Sheep are the heart of it. The owners stress that their cheese and dairy products are made from the fresh milk of their own sheep grazing the meadows around Beckov. Almost everything is labelled 100% sheep’s: bryndza, fresh and smoked cheese, parenica (a steamed cheese rolled into a spiral), cheese strings, žinčica (a soured whey drink) and even fruit yoghurts from sheep’s milk. Fresh cheese with wild garlic is a seasonal local speciality.

The Slovak salaš tradition is not only about cheese but also about the cooking that grows out of it. So the salaš runs a restaurant serving the classic bryndza dishes — and that is what makes it popular with families travelling along the D1 motorway.

Why go

  • Buy cheese on the spot. The shop is in the farm building behind the restaurant and is open daily from 8:00 to 16:00. Products can also be ordered in advance by phone.
  • Taste bryndza dishes. Bryndzové halušky (potato dumplings with bryndza), bryndza pirohy, strapačky with sauerkraut, grilled or fried smoked sheep’s cheese — all based on their own products.
  • Come with children. There is a playground and animals to pet; walking paths and cycling routes start around the farm.

What to taste and buy

In the shop (prices from the salaš website): 100% sheep’s bryndza €22 per kilo, fresh sheep’s cheese €20/kg, smoked cheese €22/kg, parenica €22/kg, smoked parenica €24/kg, cheese strings (250 g) €6.50, žinčica (1.5 l) €4, plain sheep’s yoghurt €2.50, apricot, blueberry or strawberry €2.80. The range depends on how much milk was produced, so ask the staff or phone ahead about availability. Besides cheese, they sell meat products from trusted Slovak producers and handmade souvenirs.

In the restaurant bryndza dumplings with crackling, sour cream and spring onion cost €10.80, a children’s portion €6.80; there is also confit lamb knuckle, duck and a weekly lunch menu.
