Bartik Brewpub, Polianytsia

Polianytsia (Bukovel), Ivano-Frankivsk region, Ukraine

Bartik Brewpub (“Bartik at Bukovel”) is a restaurant-brewery in Polianytsia, within Ukraine’s largest ski resort. It operates at the Skiland House hotel on Karpatska Street and belongs to the Bartik beer brand, known since 2014. For anyone looking for craft beer in Bukovel, it is one of the few addresses where beer is served under its own label rather than only brought in from other breweries.

Why stop by

Bukovel is a resort where people come to ski in winter and hike in summer, and in the evening most guests look for somewhere to sit down after an active day. Bartik Brewpub offers exactly that: a glass of fresh house-brand beer in a warm hall or on the sunny terrace. According to guests, several of the beers are worth trying, and the staff are happy to help you choose if you are new to craft styles. Beer can also be taken away — an easy way to bring home something from the Carpathians besides souvenirs. The pub is open all year round, so it draws not only skiers but also summer hikers, cyclists and families staying at the resort.

What to try

Bartik beer is not a single brewery but a small network: according to brewer Vasyl Kurliak, the brand unites three breweries in the Carpathian foothills, and in 2020 its beer made the finalists of the East European Beer Award tasting competition. The beer list in Bukovel is long, so it is easy to put together your own tasting flight of small glasses. The menu (as seen in visitors’ photos) features a classic light lager, “Polianytske”, a local lager named after the village itself, a wheat beer with zest and coriander, a Hoppy Lager, a porter, Golden Ale, Ale Brown, an IPA, a Honey Nut Ale made with Carpathian honey, a milk stout, a ginger ale and a blueberry ale brewed with wild berries, plus a non-alcoholic beer. Guests praise the Golden Ale and the honey ale most often — honey and blueberries have always been among the Hutsul mountains’ main gifts. Local snacks are served with the beer, including smoked cheese and dishes with Carpathian bryndza.

Brewing in the Carpathian foothills has a long history: in the 19th century small breweries worked in many towns of the region, and today the craft breweries of the Ivano-Frankivsk region are reviving that tradition, combining classic European styles with local ingredients.
