Kopalnia Bryndzy cheese shop and tasting, Verkhovyna
Kopalnia Bryndzy (“The Brynza Mine”) is a small farm cheese shop with a tasting room on the edge of Verkhovyna, in the valley of the Zhabievskyi stream. A wooden house with flowers on the balcony, a terrace under a parasol, benches with woollen blankets and a swing overlooking green slopes — everything here invites unhurried hospitality rather than a quick purchase. The name is playful: in the Hutsul region brynza is a real treasure, and here it is “mined” at its best. Both tourists and locals know the place; visitors say even a taxi driver recommended it on the way to Verkhovyna.
Why go
The highlight is the tasting. Several cheeses are served on a wooden board while the hosts explain how and from what they are made, how brynza differs from one polonyna to another and why one cheese is saltier and another milder. Guests are particularly grateful to Anna, who, they say, speaks captivatingly about cheesemaking and its old traditions. Afterwards you can choose what to take home, sit on the terrace or enjoy the swing with a mountain view. Reviews are unanimous: tasty, informative and genuinely warm — on Google Maps the shop is rated 5.0.
What to taste and buy
- Hutsul brynza — from soft to aged; visitors recommend the “fierce” brynza, much richer and tastier than the usual sour-salty kind.
- Budz and vurda — traditional mountain-pasture cheeses.
- Smoked cheeses and flavoured cheeses — for the road and as gifts.
- Sweets, syrups and liqueurs to go with the cheese board.
According to guests the cheeses are made from the hosts’ own produce, so the range depends on the season: more fresh cheese in summer, more aged and smoked in autumn and winter.
Brynza, the heart of the Hutsul region
The Verkhovyna area is the heart of Hutsulshchyna, where pastoral life on the polonynas continues to this day. Every summer shepherds drive their flocks up to the high meadows, and cheesemaking crews turn sheep’s and cow’s milk into budz, which then ripens into brynza. It takes experience and patience, and recipes are handed down within families. Buying cheese in a shop like this supports local farmers and keeps a living tradition of Hutsul cuisine alive.
How to taste and carry cheese home
Come without hurrying: a tasting with stories takes a while, and that is what makes the visit special. Carry fresh cheese in a cool bag, and for long journeys choose smoked and aged cheeses, which keep well. If you would rather not carry it, orders are shipped by Nova Poshta across Ukraine.
When to come
The shop is open every day, so you can drop in at any time of year. In summer and early autumn there is the widest choice of fresh polonyna cheeses, and the terrace and swing offer lovely views of the green slopes. In winter Kopalnia is a cosy stop on the way to or from Verkhovyna, where you can warm up and taste aged cheeses. If you are coming as a large group or want a longer tasting with stories, call ahead to arrange a time.
